Pepper Soup ;) Nigerian recipes 

OK pls save it, print it, & cook it. Tastee

Pepper Soup (stew or sauce) Serves four to six

Ingredients
3 pounds stewing beef (optionally, goat meat or fish)
1 medium onion, chopped or ground in blender
1 teaspoon dried red pepper, crushed or ground
fresh red tomatoes, chopped or ground in blender (optionally, one 6 oz can tomato paste)
2 tablespoons cooking oil
1 teaspoon salt
1 teaspoon curry powder (optional)
2 Maggi cubes (optional)
1 teaspoon thyme leaves (optional)
1 cup water

Equipment
stewing pot
mortar and pestle, food processor, or blender
knife
spatula or spoon
cutting board

Preparation
Cut up beef (or goat meat) in small pieces and place in stewing pot
Combine with water, salt, and onion
Boil until meat is tender
Drain
Remove meat from pot and save water in a bowl
Heat oil in stewing pot, add and brown onion
Add meat and ground tomatoes or dilute tomato paste with water and add to meat
Add the remaining ingredients one by one, stirring each as added
Simmer for ten minutes and serve with rice

Who is Mgbala Agwa Youths Forum? 

Taking part of Angie's initial speech-->

Mgbala Agwa Youths Forum is a community based NGO operating in Imo State, Nigeria. Their aim is to educate people on HIV/AIDS and STD's, protect the environment, alleviate poverty, and empower youths. Their main focus at the moment is HIV/AIDS and STD's which of course, as most people know, is an epidemic in Africa.

We are actually fundraising to help them finish the Library and Youth Centre. Other campaigns are to find more education materials for not only for the library, but for schools.

We are just put in the world to help each other, no matter our lives condition, if we are busy to death or never really been there for no one, this is a great chance to make a difference.

How to make a Bronx Cocktail 

Ingredients
1 ounce gin
1/2 ounce sweet vermouth
1/2 ounce dry vermouth
1 ounce fresh-squeezed orange juice

Shake with cracked ice; strain into chilled cocktail glass.
Garnish with a cherry or small wedge of orange.

Perth 

What can I write?

Perth is a great place to live. Yes, it can be slow at times... but I think it's all what you put into it that's what you get back. I don't think I've ever been bored here. I love to travel all around the city, Fremantle, Subiaco, Claremont, and the bush. Even if you give the city a miss, you won't be disappointed! Up north are our great coral reefs and rock formations, down south are the beautiful forrests. To the east is the dessert, gold mining, and different types of rock formations. There are great beaches every where, where you don't feel cramped - you feel like you have your own space. I may not be skilled in bushcraft like J, but I love to bush walk.

I've travelled to many places around Australia... and really, I love it here - the people, travelling around - it's really a contrast of places. I really wouldn't want to live any where else in Australia... we may be the youngest settled state, but we're growing the quickest, comapred to other states. long live WA! :D

Kids Just Try This At Home 

Margarita's!


This is a recipe for Margarita's on the rocks that will make enough for two and a very pleasant dinner. The keys to an excellent margarita are fresh squeezed lime juice and lots of ice. Limes should be ripe, soft and juicy. The Margarita's will taste smoother if they are made early.



Ingredients

3/4 to 7/8's cup tequila [The blanco (colorless) tequilas have a smoother taste than the gold]
1/4 cup triple sec
1 cup water
1/4 cup fresh squeezed lime juice ( 2 or 3 limes depending on size)
lime slices
margarita salt ( not table salt )
enough ice to fill two glasses
a carafe or mixing container
a juicer (electric juicers work well and cost about $25 to 30)
two good drinking glasses ( wine glasses work well )

Mixing instructions

1. juice the limes to make 1/4 cup lime juice.
2. make lime slices to add to the top of the drinking glasses.
3. take a lime slice and rub it around the top of the drinking glasses to lightly coat them with lime juice.
4. dip the tops of the drinking glasses in margarita salt, shake off excess.
5. fill glasses to top with ice.
6. add the lime slices to the top of the glasses.
7. in a carafe or mixing container mix tequila, triple sec, water and lime juice.
8. add mixture to glasses.
9. enjoy....

Whilst in Toronto I had the opportunity to go to the Hockey Hall of Fame... for ice hockey, not field hockey.

One of the best experiences I've had was there... it was.. great. I'm a bit of a sports fan, so even a sport that I only watch if it's on (ie, ice hockey), is fun for me.

The winner of last last season's NHL (national Hockey League - ice hockey league in North America) were the Detroit Red Wings - who are one of Manda's fave teams.

But before I go... I'd like to tell you a funny story!

Funny thing - J just popped in. Hope you don't mind me telling this story!

This happened in her uh ex-home country... I guess you could call it? Anyway, she was visiting her cousin's house, and they had been baking a chocolate cake. Without the cousin knowing, a lizard had dropped into the mixture and was cooked in the cake. The cousin chopped the cake, and the remains of the baked lizards were there!

Yuk yuk yuk groooooossssss

So that's where all the protein in chocolate comes from....

Chocolate Croissaint Pudding 

Ingredients
4 croissaints, torn into pieces
100g dark chocolate, chopped into pieces
4 eggs
1/3 cup caster sugar
1 cup milk
1 cup cream
1/2 tsp grated orange rind
1/3 cup orange juice
2 tbs coarsely chopped hazelnuts

Preheat the oven to moderate 180c. Grease the base and side of a 20cm deep sided cake tin and line the bottom of the tin with baking paper.

Place the croissaint pieces in the tin, then scatter evenly with chocolate.

Beat the eggs and sugar together until pale and creamy.

Heat the milk and cream in a saucepan to almost boiling, then remove from the heat. Gradually pour into the egg mixture, stirring constantly. Add the orange rind and juice and stir well.

Slowly pour the mixture over the croissaints, allowing the liquid to be absorbed before adding more. Sprinkle the top with the hazelnuts and bake for 45m, or until a skewer comes out clean when inserted in the centre.

Cool for 10m - run a knife around the edge, then turn out and invert. Cut the wedges and serve with warm cream if desired.

Some may say that the anthem is outdated, old, and we need a more... interesting one. And that we need to make everyone learn it. I don't really have an opinion... but i mean, who still uses the word girt? well.. no offense if you do... but not many people now-a-days do.

Lawas 

I don't think many people have heard of Lawas. But my cousin requested the story of my trip to Lawas. That's my father's uh birthplace or home.. villiage... or something... or where they hid during WWII. I think it's the latter. It's a fair drive from the state capital Kota Kinabalu, to Lawas. Then, you have to take a really shoddy looking boat to Lawas. I was about 10 when I went. I remember - it was like the jungle... tall grass... tall trees... to walk over to the house where my dad's family used to live you had to cross a bridge (which was now very rickety). About 14 years ago or so, the house was burned down. But you can still see the remains of the house. This place was a boat ride/long swim to the township. The township's pretty small, but it still has a really small MAS terminal/plane thing. The terminal's probably like 30 years old. I remember there were signs saying beware! Snakes! (and other miscellaneous dangerous animals).

I don't really remember much else from Lawas...

Baklava 

Another Turkish recipe :)

1 Pkg Fillo Sheets
1 lb Butter, melted
1 lb Walnuts, chopped
3 c Sugar, white granulated
1/2 ts Ground Cloves
1 ts Ground Cinnamon or 1/4 ts Ground and 1 Stick Cinnamon
9 x 13 Pyrex Baking Dish
Pastry Brush

1. Chop walnuts to medium fine and mix with 1 cup sugar, 1/4 Teaspoon ground Cinnamon and 1/4 Teaspoon ground Cloves.
2. Melt Butter.
3. Cut Fillo in half so that each sheet fits the bottom of the Baking Pan.
4. Generously butter the bottom and sides of the baking pan and place the Fillo, one sheet ata a time, in the baking pan. Generously spread butter on each sheet of fillo as it is placed in the pan. Every 6 to 8 sheets of Fillo spread a layer of walnut mix. Continue layering Fillo sheets and walnuts until Fillo is complete. Pour any remaining butter over top of the Baklava. The secret to good flaky Baklava is to have each sheet of Fillo well buttered so that the sheets do not stick together. 5. With a sharp knife, cut the Baklava diagonally to form diamond shaped pieces.
6. Preheat oven to 350 degrees and bake the Baklava for 40 to 45 minutes or until golden brown on top. Remove from oven and allow to cool completely.
7. SYRUP Mix - one cup water, two cups sugar, 1/4 teaspoon ground cloves and either 3/4 teaspoons Cinnamon or the Cinnamon stick in a sauce pan and bring to a boil. Simmer for 20 minutes. 8. Pour the boiling syrup over the cool Baklava and allow to cool completely again.

When cool serve individual pieces with strong (Turkish) sweet coffee and dried apricots for an exquisite dessert.

Turkish Recipes 

Hmm... I don't think I've ever had real Turkish food. Here is a recipe, supplied by Yasemin, for Turkish Delight!

Ingredients
2 c Sugar
2 tb Cornstarch
1 c Water
1/2 ts Cream of tartar
1 tb Flavoring ( rose, mastic, strawberry, orange or lemon.)
Food coloring (red, yellow, green or orange) - depending on flavoring used)
1/2 c Toasted nuts, chopped
Confectioners' sugar

Method:
Dissolve sugar and cornstarch in water. Add cream of tartar. Boil to 220 degrees F. Cover pot the last 5 minutes. Add flavor and food color. Add nuts.

Pour into oiled shallow pan. When cool, cut into squares and roll each piece in sifted powdered sugar.

Store in a plastic bag.

Mmmm... now I'm hungry... I'm going to have breakfast...

Polish Food 

Now I don't really know much about Polish food. My friend just requested me to do it. I have 3 Polish friends (including her), but we don't really talk about Polish food. I just learn how to say silly things in Polish like, "You're crazy!".

All I know about Polish food is that there are things called pierogi, and they use cabbage quite a bit in their food. Pierogi's one of their most famous dishes, I would imagine. My friend's grandparents have a song about how they make pierogi - unfortunately, I don't know this song. Pierogi can either be meat and vegie, or just plain vegie.

You know what? These things look remarkably similar to the Chinese dumplings (also known as "jiao zi" or "sui gao")...

Here I was, kicking some piggy's back, which I may add was a poor guy disguised around in the bad moment at the bad place.
My ultimate dream in Llanquihue, Chile, such a strong German influence I practically found sausages, smashed potatoes and beer in every single menu no matter the price :P

Ecuador's latin affair 

hi you all i love u 2, I am Pame, from the Omega Team, OMG it feels weird, I dont think I deserve to share any credit around, I am just showing up and trying to give the world something interesting. Hi Angie :P :P :P HI mom :P :P :P lmao

Since I am sure u would not visit my country just to learn the national anthem, what I am sure of is that one day you will be in a cocktail or something and right in the middle of the boredom u may add: Hey did u know that Ecuador's national anthen goes like this....Hey Angie, I will make you sing it!

We do not just put our hand in the chest like a full American patriot, I mean we are Americans cos of the continent, u know, anyway i wonder when did the USA took the entire adjective for themselves. Hey, no hurt feelings. That does not change the geopolitical situation nowadays :P

I can be considered a Latin girl, that is a good definition. That may come cos I speak Spanish, which is likely one of the Roman lingos, such as Italian, French, Rumanian, Portuguese and lots of dialects over there. All of them were once just dialects, vulgar spoken branches out of Latin, the official Roman Empire's language. Once politics make Rome an unstable spot, and the Barbarians decided to move on and settle down once and for all close to the Mediterraneum... people freaked out and ran away and eventually learned to live close to other tribes all over Europe (long long sentence).

I can make a living out of this.

Ok back to my national anthem, it is all about what was happening in the Pichincha volcano, while Spaniards, colonialists, and revolutionary groups fought against each other in May 24, 1822. Ok, I am sorry but there was barely oxygen to breathe, so high it was. The rebels, full of indigenous pretty habituated to volcanoes and ethereal summits, were winning around. Lots of people died, being poorly armed and trained, but they all gave just everything they got by then: their dreams and their passion. It is like many people may share the same lines about their country's history. Those were romantic times, where a guy called Simon Bolivar just for once daydreamed about a free America (the whole continent) and while French already fought for it and the United States were so young and pretty, he set free and established 5 nation in less than 20 years. We could have remained like a Spanish colony forever! Well, now we remain as a colony of other countries cos economical interests, but that is another blog matter :P

The Phone Line.... you girls do not know how to stop chatting on the phone! I can't believe you heckle each other while you're on the phone either. Your limit was hogging the phone for half an hour. *taps at my clock* Ok so you're in a foreign country, under age, without your parents. I don't know how you all got up at 6am in the morning after two huge parties one after the other.

Meanwhile, I can't believe it's been a year since I met you girls. (Thanks for pointing it out too). How could I stand putting up with you for so long? *shocked* You must've cast a spell on me!

The first time I met you was in this phone line at the school. I was waiting (impatiently) for all of you to get off the phone! They should've installed more phones - just for us! ;) I met a strange tall girl with strawberry blonde hair and blue eyes, who was sitting right in the middle of the corridor, blocking everyone's way. When it was her turn to go ahead in the phone queue, she stood up. Eventually, she stood next to me and started to whinge.
Her: "I rung home last night, but my brother answered. Talking to him was talking to a brick wall"
Me: "Same with my brother!"
Her: "Yeah, well I rung him and he didn't say any thing. I said, "Hello, can I speak to mum or dad?" He didn't reply. "Are they home?" Silence. "Could you tell them (insert mum happy bday), and I stood really close to the Pope?" He replied, "I'll tell them you were within spitting distance of the Pope."

Malaysia Truly Asia! 

Wow... Malaysian culture. When I think Malaysia, I think "Who are Malaysians?" The three main ethnic groups in Malaysia are Malays, Indians, Chinese, and indigenous groups such as the Dayaks. Unlike our Singaporean neighbours where it's more Chinese meets West, Malaysia is an Asia meets West country.

The national language is Bahasa Melayu (Malay), but people can also speak Chinese and/or Indian dialects, as well as English.

It's quite difficult to explain how diverse Malaysian culture really is, without typing great lengths. I suppose the easiest way is to break it down by festivals. It is said that Malaysia has the most public holidays. (probably due to the festivals?)

The majority of Malaysians are Malays. The most popular religion in Malaysia is Islam - but it is not a state religion. There are only 2 (or 3?) states in Malaysia that are actually strict Muslims. Malays are known to be good at creative arts. For example, batik printing, and wau making.

The next main ethnic group are the Chinese. There are all sorts of dialects spoken in different areas of Malaysia. eg, in Kuala Lumpur Cantonese is the most common Chinese dialect, while in Kota Kinabalu, Hakka is the most common Chinese dialect. Main festivals for Chinese include Chinese New Year and the Mooncake Festival.

Indians are the next main ethnic group - they speak 3 different dialects/languges - Tamil, Malayalam, and Hindi. They have many cultural traditions, such as dance and music. Main festivals include Deepavali (Festival of Lights).

All these cultural influences are visible everywhere. Just to prove it, Malaysia has 14 major holidays, revolving around festivals: Christmas, New Year's Day, Hari Raya Puasa, Thaipusam, Chinese New Year, Wesak Day, Kaamatan Festival, Gawai Festival, Festival of San Pedro, the Flora Festival, Malaysia Festival, Mooncake Festival and Deepvali.

Malaysia is truly Asia in one single country.

Arghhh! Fire drill! 



At 11pm/12pm at night, when we were sleeping at the school (North Albion Collegiate Institute, Etobicoke, Toronto) our fire alarm went off. A lot of the girls who were sleeping ran out of the fire exits. The boys.. well I don't know... I guess they were walking. We all gathered outside, and low and behold, it was just a fire drill.

The above picture is of Mike, who was sleeping and thought it was a real fire so he grabbed the fire extinguisher and bolted out the fire exit. (Sorry Mike!)

Middle Eastern Food 

I had never had 'real' Middle Eastern food until the neighbours moved in 5/6 years ago. My neighbour was tutoring me in Chem and Intro. Calc. cos I found it boring. We gave them some fruits I think. Then the next day at lunch time, they carried a couple of plates of Persian food to our house. The food is great! If you haven't had it, you should try it.

ps-Mona, I'm still waiting for an English version of an Iranian cook book!


Singapore travels 

What can I say about Singapore? I've been there probably like, over 10 times! In fact my first 4 Christmases were spent in Singapore for some strange reason - I'm not even Singaporean.

So it's really hard to think up of one story. My girl friend suggests shopping and food. Hmm... this will be hard - Singapore has great shops! A huge shopping centre thingy is Takashimaya. It's so big, and so good! It's next to another shopping centre - but a smaller one. But hey, it's shopping - it's all good right? :))) There's an annual Singaporean Big Sale... the bargains... a shoppers delight. well, ok it's a bargain considering it's cheaper than usual.

Singapore also has great food, but it's mainly Chinese. The majority of the population in Singapore is Chinese... I think it's like 70 something % Chinese. I can't really reccommend any places, since a lot are good. But I suppose the most famous hawker centre is Newton Circus. At the bottom floor of Takashimaya there are quite a number of food stalls where you can eat. MMMMmm yyyuummm - i'm getting hungry while I type this. There is Chinese and Japanese... I can't remember what else.

Oh a place NOT to go to - Boat Quay - it's popular with tourists and ex-pats. But it's not value for money. Sure I guess it's got a nice view and every thing, but it's soooo expensive!

That's all I've got to say... I think my brain is fried with caffiene... I've had 2 cups of tea only though :S

Jaspers' Huntersauce 

This is a great recipe... it's edible! Try it! It's my Belgian net pal's family recipe, taken from http://users.pandora.be/familie.jaspers/home_english.htm#The%20recepies: It's really quite simple to make.

1. The Famous Jaspers' Huntersauce: especially appreciated by some people in Meise, Grimbergen and Dallas!
cooking time: about 15'

Ingredients (4 people):

250 gr. mushrooms - 2 smaller onions - 200 gr. smoked bacon in small pieces - 1 glass of the red wine that you will drink with the meal (Preferably a Pauillac wine, but a Merlot will also do it) - 50 gr. butter - 1 spoon of tomato concentrate - 1 spoon of Maizena express - pepper

"Preparation:

Melt the butter in a saucepot, fry the bacon, put the bacon aside.

In the same pot and in the grease, fry the cut onions (small pieces), put aside with the bacon.

Again in the same fluid (add butter if necessary), fry the cut mushrooms on a high fire. A tip: NEVER clean the mushrooms using water (H2O) use dry cleaning paper to take away the dirt!.

Add the bacon and onions to the mushrooms, throw the tomato concentrate in the pot and add the wine. Bring to boiling. Add pepper, salt is not needed as the bacon will add this taste! Let softly boil for 5 minutes, add the Maizena to give the sauce some consistency (not absolutely necessary, but the sauce will look more beautiful).

Take away from the fire and add one small piece of butter that you stir in the sauce. The effect should be a more bright sauce.

Serve with chicken, steak or veal; rice, French fries or bread."

Sorry, this is a story in Chinese. Just to please my mum, as I haven't been studying Chinese during the holiday. (I hope my Chinese teachers at uni don't read this! I can imagine them reading it and going, "hmmm that's an F!" hey if they are reading it, it's early in the morning! Give me a break!)

I swear to God, I have totally utterly murdered this song. It's really hard to sing when its 1:38am, when people are sleeping. So I tried to sing softly, not to wake people up. I'm so not in tune. Argh!

Penang 

Thanks for that lovely post Bryn. I'm not too sure about making angels blush though...

Well what can I say about Penang, Malaysia? I’ve only been there once... 3 years ago, I think. A famous beach, Ferringhi Beach (spell?) is so hyped up but it’s so shoddy! It’s really small... it’s incomparable to Australian beaches, especially those in WA. :) WA's beaches ROCK!

One of the longest bridges in the world can be found in Penang. I think it’s the 3rd longest from memory... or longest in South East Asia? I can’t remember.

I think they like playing tennis there. I was so jealous - whenever we were in the car and we passed tennis courts, all these people would be playing tennis. I wanted to be out there playing tennis and *hopefully* beating them instead of being cooped up in the car!

If you can’t tell, I’m big on food. And the food in Penang is so good! From what I can tell, it’s mainly Chinese food. It’s famous for its hawker places. There are several big hawker food places – 1 for locals, and 1 for tourists. We went to one... I’m not sure whether it was the tourist one, or the local one. I remember seeing this guy who looked exactly like one of the main actors off Two Guys and Girl... and a pizza place there. You know the dorky serious guy who wants to find true love? I saw a guy who looked exactly like him. Maybe it was him!

Newsflash: my friend Bryn is going to do an honourary post. Some time.... :S

HK Travel Story 

Hmmm... what shall I say about Hong Kong? I went there in 1998, with my mum, brother, and his friend Irwin.

Oh I know :)

The shopping is TERRIFIC! It claims to be like, the Milan of Asia. If you want a bargain for clothing, go into the back streets. It's considerably much cheaper than in normal department stores (unless they're having a sale).

We stayed in Hong Kong for a couple of days - just to have a look and visit rellies. Every day, my brother and Irwin, and mum and I would part our seperate ways and then gather before dinner time in my room so we could have dinner together. So mum asks, "So what did you boys have for lunch today?" They would reply McDonalds. It was the only thing in English they found and could pronounce, so they had a Big Mac for lunch every day, whilst mum and I had good Chinese food cos mum can speak some Cantonese. LMAO That story cracks me up every time!
